Michel Cluizel's Commitment to High Quality Chocolate

Michel Cluizel gave the family business his name because he was committed to making the highest quality European chocolate.  Unlike many other chocolates from France, Cluizel buys all of his cacao beans (the raw ingredient for chocolate) directly from plantations around the world.  This allows Cluizel to have greater control over the quality and flavor of his chocolates.  The more typical approach, followed by most chocolate companies, is to buy chocolate couverture from large, industrial manufacturers.  Chocolate couverture are blocks of chocolate that are ready to be melted and formed into finished bars, truffles or other shapes.  Chocolatiers that use chocolate couverture save some money, but give up control of several important steps in producing fine chocolates.

Michel Cluizel’s chocolate products are noteworthy because he has banned soy lecithin from their entire line.  Other chocolate companies use soy lecithin or other emulsifiers to create a creamy texture, without having to use more traditional and expensive manufacturing techniques.  In part, by grinding the cacao down to a mere 18 microns, Michel Cluizel can achieve a superior smooth and creamy quality without unnecessary ingredients. 

Further Monsieur Michel and his company only use the finest ingredients.  For example, they use only pure cane sugar and never include corn syrup or cheaper beet sugars.  Perhaps most importantly, Michel Cluizel only uses cocoa butter and refuses to use hydrogenated oils that contain unhealthy trans-fats.  The result of Michel Cluizel's commitment to high quality chocolate is one of the finest artisan chocolates from France.

While Michel Cluizel makes over 1,400 products, their 1ers Crus de Plantation chocolates often receive special acclaim.  Starting in 1997, Michel Cluizel searched for remarkable cacao plantations in the most renowned cocao producing countries with the goal of creating single origin chocolates.   As a result of this effort, we can all enjoy 5 fine dark chocolates and 1 remarkable milk chocolate.  In fact, these are not just single origin chocolates that come from one region of the world, but they are really single estate chocolates that each come from a single plantation.  They are as varied in flavor as the countries they come from.  The “Plantation” collections should be enjoyed and compared like fine red wines or any of life’s other luxuries. History

In 1948, Michel Cluziel began manufacturing chocolate as an apprentice in Darnville, a small town in the Normandy region of France.  From that humble start, he has grown Michele Cluizel to over 200 employee and 1,400 chocolate products.  These chocolates are used by some of the finest restaurants and chefs in North America, Europe and Asia.

Monsieur Michel has turned over daily control of the company to his four children, Marc, Catherine, Pierre, and Sylvie.  But, his heart and dedication remain committed to ensuring the quality, purity and flavor of the products produced by the company that bears his name.
